High protein, choc dipped cookies 

Ingredients:
  • 30g plain or vanilla pea protein powder
  • 40g almond meal
  • 20g coconut flour
  • 20g peanut butter
  • 10ml coconut oil, melted
  • 1 large egg, whisked
  • 15g dark chocolate, cut into choc chips
  • 1 tsp baking powder
  • 15 dark chocolate, melted
Method:
  1. Preheat oven to 180 degrees celcius.
  2. In a large mixing bowl, add almond meal, coconut flour, pea protein and baking powder. Stir to combine dry ingredients together. 
  3. In a separate bowl, whisk the egg and pour in the peanut butter and melted coconut oil.
  4. Stir to combine.
  5. Add the wet ingredients to the dry ingredients, and continue stirring while adding in the dark chocolate bits.
  6. Using your hands, start to work with the mixture to form a dough.
  7. Roll mixture into 8 even sized balls and place on baking paper. Flatten softly.
  8. Bake for 15-20 minutes, and allow to cool on a cooling rack.
  9. Dip each cookie in your melted chocolate and allow to set in the fridge before consuming. 

Serving information:
  • Serves: 8 cookies (roughly 50g each)
  • Macros per cookie: 101 calories, 3C/7F/7P
