High protein chocolate bread

Ingredients:
  • 60g chocolate protein powder. 
  • 200g black beans, drained, rinsed and mashed
  • 20g traditional oats, ground into flour.
  • 150g Vanilla greek yoghurt
  • 80g liquid egg whites
  • 3 tsp cacao powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 50 ml almond milk.
  • 20g walnuts, chopped.
Method:
  1. Preheat oven to 180 degrees fan forced.
  2. Using a hand-held blender or food processor, blend black beans into a paste and pour into a bowl.
  3. Add in egg whites, almond milk and greek yoghurt and whisk lightly to combine.
  4. Stir in protein powder, cacao powder, baking powder, baking soda and oat flour.
  5. Stir well to combine, and add in chopped walnuts. 
  6. Pour into a lined loaf tin and cook for 20-30 minutes.
  7. Use all your patience and self-control to allow the loaf to cool completely before slicing into 12 even pieces. This is the hardest step of them all.
  8. Serve fresh with peanut butter, or keep in an airtight container in the fridge for up to 3 days. You can also heat/toast the slices if you want them warm!

Serves: 12 slices.
