Ingredients:
- 300g pumpkin or sweet potato, boiled and mashed into a puree
- 100g chocolate pea (not whey) protein powder or almond meal
- 60g dark chocolate, melted
- 60g natural almond or peanut butter 100-150ml water or almond milk
- 2 sachets Glow Mocha
- 1 tsp baking soda
- Optional toppings: melted chocolate
Method:
- Preheat oven to 180°C
- To a large bowl, add pumpkin and mash into a puree.
- Add the pea protein, nut butter, melted chocolate and water into the bowl. Stir to combine
- Fold through the Mocha Glow sachets and baking powder
- Pour batter into a lined brownie pan, and bake in the oven for 20-25 minutes.
- Allow to cool completely before drizzling with chocolate and extra toppings and cutting into 16 pieces.
