Loaded Banana Bread Bars 

Ingredients:
  • 200 g banana
  • 50g  nut butter (I used smooth peanut butter!)
  • 100g pea protein powder (I always use the brand Happy Way. I used half vanilla, and half chocolate to achieve to swirl!) 
  • 30 g rolled oats 
  • 20 g almond meal 
  • 100 ml egg whites 
  • 2 large eggs
  • 1 tsp baking powder 
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 20g dark chocolate 
Method:
  1. Preheat oven to 180 degrees celcius, fan forced.
  2. Blend banana, oats, half of the egg whites and peanut butter together using a food processor/hand-held beater.
  3. Pour into a large bowl and whisk in the egg
  4. Stir through half the protein powder and all of the almond meal, baking powder, baking soda, vanilla extract and cinnamon until combined.
  5. Fold through the dark chocolate chips, and pour the batter into a lined loaf tin.
  6. In a separate bowl, mix together remaining egg whites and protein powder (50ml egg whites, 50g protein powder). Pour on top of mixture in tin, and use a spoon to ‘swirl’ the mixtures together on top. Add any extra banana slices (or nut butter!) if you want!
  7. Bake in the oven for around 20-30 minutes before transferring to a cooling rack to cool before slicing. 

Serving information:
Serves: 12 slices (around 50g per slice)
Macros per slice: 119 calories, 8C/5F/11P
