Glazed Orange Poppyseed Muffins  

Ingredients for the muffins:
  • 30ml juice of an orange 
  • 100g greek or plain yoghurt (I used full-fat for a creamier consistency)
  • 1 large egg, whisked
  • 40g almond meal 
  • 30g oat flour (or flour of choice)
  • 1 tbsp orange rind. 
  • 1 tbsp poppy seeds.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
    Optional: I filled mine in the centre with orange marmalade

Ingredients for glaze:
  • 30ml juice of an orange 
  • 2 tsp granulated natural sweetener of choice (e.g. Stevia)
  • 40g greek or plain yoghurt.
 ​ Method:
  1. Preheat oven to 180 degrees, fan forced.
  2. In a large mixing bowl, mix together almond and oat meal until combined.
  3. Pour in the orange juice, greek yoghurt and whisked egg and stir until combined.
  4. Add the baking soda, powder, orange rind and poppyseeds, and fold through the batter.
  5. Pour batter across 5 lined muffin holes (optional: add a tsp of marmalade to the centre of each muffin!)
  6. Bake in the oven for 20-25 minutes and allow to cool before glazing.
  7. For the glaze, whisk together all ingredients until combined. Add more sweetener to taste, and allow to sit and thicken for a few minutes before drizzling over cooled muffins.

​Serving information:
  • Serves: 5 large muffins
  • Macros per muffin (with glazing, no marmalade filling): 120 calories, 7F/10C/6P 
    Note: a marmalade filling will only add an extra ~30 calories depending on how much you use per muffin.
