Single Serve Chocolate Scrolls

Ingredients for the dough:
  • 20g coconut flour
  • 30g vanilla pea protein powder
  • 100ml almond milk
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar 
Ingredients for the chocolate filling:
  • 5g natural granulated sweetener of choice (I used Nuvia!)
  • 20g dark chocolate, or any chocolate of choice, melted or ​chocolate hazelnut butter. 
  • 2 tsp almond milk

Method:
  1. Preheat oven to 180 degrees celscius, fan-forced.
  2. For the dough: In a mixing bowl, combine flour, vanilla pea protein, and baking powder. Stir to combine.
  3. Add in almond milk and apple cider vinegar and stir to combine a 'dough'.
  4. Mould the dough with your hands, and using a rolling pin, roll it flat onto a piece of baking paper.
  5. For the chocolate filling: Mix together all ingredients in a small bowl.
  6. Spread the filling evenly across the dough until it's covered.
  7. Using your hands pinch the edge of the dough closest to  you and carefully roll the dough into a scroll. If it collapses a little don't worry! You just need it to fit into your single serve ceramic dish!
  8. Place in oven, and bake for 15-20 minutes.
  9. Dig in while it's still hot!
